Flor de Sal is produced by the temperature contrast between day and night, and forms a kind of film over the surface of the ponds. It is a high-value product because it is not produced every day.

Every morning, first thing in the morning, we check whether any fleur de sel has been produced and, if so, we proceed to harvest it.

This process is entirely artisanal. The salt worker enters the ponds and, using a salt pan, collects the salt suspended on the surface. It is then stored to dry, and after a manual process to remove impurities, it is packaged for direct consumption.

The salt obtained is a pure, organic product with a high flavor.
